Challenging Challenge

After getting such great feedback from my kiddos on the wonderful brownies made with spinach and carrots (recipe is in previous post) I got motivated to try a new recipe for lunch today...
First, I should let everyone know that we went with some friends this past Thursday to Casa Blanca and my kids ate the mess out of some cheese quesadillas. Emma asked me if I could make them at home for her sometime and I said of course! So this morning when she started telling me that she was "SO HUNGRY" (little drama queen) I gave her the option between a cheese quesadilla or a grilled cheese. AND I resorted to my handy dandy cookbook...

The cheese mixture that I made contains 2 cups shredded cheese (I used Colby & Monterey Jack cheese because that is what I had in the fridge but if I were going to go buy cheese for this recipe I would use a mild cheddar), 1/2 cup sweet potato puree, & 1/2 cup squash puree. I just mixed those all together. This is a lot of cheese mixture, I made it to have in a Tupperware container so I can have it on hand when the whining begins for lunchtime favorites.



I used whole wheat tortillas and spread the mixture on one side. I got the skillet VERY hot and used some non stick cooking spray so when I put the tortilla on there is sizzled a little.
Eli LOVED it and ate the whole thing. Emma... when she started whining that she was hungry I let her into the grapes while I got lunch ready. I think she ate too many grapes and really wasn't hungry for her actual lunch. She ate it because she wanted the brownie at the finish line, but she was not as excited about it as Eli was. I had made two quesadillas and let the kids half one and then Adam ate the other one. He told me it was good and it just tasted like cheese. It didn't taste like anything else was in there.

I didn't do a lot of cooking during the holidays- it was my Christmas present to myself :) So I have been planning a big New Years Dinner with ham, dressing, broccoli rice casserole, rolls, and topped off with a Pecan Pie. Will my kids eat all that? Probably not. So I will be adding Macaroni & cheese made with cauliflower puree to the menu and some cookies with vegetables mixed in as well. I will let you know how that goes :)
