ToFu Nuggets

Last night was Asian night in our house. We have asian night at least once every couple of weeks, it is when Adam cooks all his Indonesian favorites. He makes fried rice (with brown rice) full of fresh cut vegetables (carrots, peas, bell peppers, mushrooms, corn, spinach, and snow peas) for us and it is delicious!!! The kids usually snub their noses at the vegetables in the rice. So I tried my hardest to come up with some stuff that was still associated with Asian night that they would eat. I steamed and lightly salted Edamame and Emma actually really enjoyed eating them- I think it was fun for her to get the soy beans out of the pod. I took some brown rice and mixed it with a little cream of chicken soup and melted cheese on top, then I made ToFu nuggets.
Tofu Nuggets:
Cut up extra firm tofu into "nuggets"
Dump them in the egg mixture (1/4 cup egg beaters, 1/2 cup squash puree, 1/2 cup carrot puree blended together)
Next, batter the nuggets in whole wheat flour
Then using Smart Balance oil, put them in a very hot skillet til brown and crispy
Serve with Ketchup

Edamame was a hit with Emma-she loved it! Not a hit with Eli- he wouldn't even try it!
They both ate the rice
Each of them ate one Tofu nugget... didn't hate it but didn't absolutley love it either
Eli ate tons of my veggie fried rice- stinker, make up my mind if you like it or not :)
